Cuba Libre

1 part light rum
juice of 1/2 lime
Cola
slice of lime, ice cubes
Pour rum and lime into an ice filled highball glass and stir well. Fill with Cola. Garnish slice of lime and serve a straw.

Santa Libre

Santa Libre is a Dominican version of Cuba Libre, but take Sprite instead of Cola.

Eye-Opener

4 parts (2 oz.) light rum
Pernod 1 tsp.
Cointreau 1 tsp.
White creme de cacao 1 tsp.
Bar sugar (1/2 tsp.)
1 egg yolk
Shake all the ingredients vigorously with cracked ice in a cocktail shaker. Starin into chilled sour glass.

Mai Tai

Lightly beaten egg white
caster sugar
1 part white rum
1/2 part unsweetened orange juice
1/2 part unsweetened lime juice
3 ice cubes, crushed
cocktail cherries, pineapple cubes, orange slice
Dip the rim of stemmed glass in the beaten egg white, then the caster sugar. Put the rum, orange juice and lime juice into a cocktail shaker or screw-top jar. Decorate with the cherries, pineapple and orange slices.

Zombie

1 part dark rum
1 part white rum
3 ice cubes
1/2 part apricot brandy
2 parts pineapple juice
1 tablespoon unsweetened lime juice
2 tsp. powdered sugar
sprig of mint, cocktail cherries, pinepple cubes, powdered sugar
Place a tall glass in the freezer so the outside become frosted. Put the ice in a cocktail shaker. Add the rums, apricot brandy, fruit juices and sugar. Shake to mix. Pour into the glass without straining. Put the mint, cherries and pineapple on to a cocktail stick and place across the top of the glass.Sprinkle the powdered sugar over the drink and drink with a straw.

Bahama Mama

1/2 oz Barcelo Rum Gran Aņejo
1/2 oz Coconut Liqueur
1/4 oz Barcel0 151-proof Rum
1/4 oz Coffee Liqueur
Juice of 1/2 Lemon
4 oz Pineapple Juice
Combine ingredients and pour over cracked ice into highball glass. Garnish with a strawberry or cherry.
